Thai Green Curry

Serves: 6 | Prep Time: 10min | Cook Time: 30min
Ingredients:
- 1-3/4C - Coconut Milk
- 3Tbsp - Green Curry Paste
- 1C - Chicken Stock
- 1lb - Chicken Thighs
- 2Tbsp - Brown or Raw Sugar
- 2Tbsp - Fish Sauce
- 4 - Kaffir Lime Leaves (Crushed or Torn)
- 1-1/2C - Bamboo Shoots (Sliced)
- 1C - Thai Basil
Instructions:
- In a pot, reduce 3/4C of the coconut milk until thickened. Add curry paste and cook, stirring constantly over medium heat for about 2 minutes.
- Add chicken thighs, stock, sugar, fish sauce, lime leaves, and remaining coconut milk. Simmer gently for 15 minutes or until chicken is fork tender.
- Add the bamboo shoots, bring to a boil, and then remove from heat.
- Add the thai basil, and taste at this step. You may want to add additional fish sauce, sugar, or lime leaves at this step.
- Serve over rice.
