Sourdough Pasta Dough

MainIngredients:
- 100g - Active Sourdough Starter
- 250g - All Purpose Flour
- 2 - Eggs (beaten)
Instructions:
- In a stand mixer with a dough hook, combine all ingredients on low speed until it just comes together. You may need to stop the mixer and knead for a few seconds by hand to get all the flour to stick. It will look like there is not enough moisture, but it will come together, trust me.
- Once the dough becomes one whole piece, increase mixer speed to medium and let the mixer work the dough for about 5 minutes.
- Form the dough into a ball, wrap in plastic wrap, and refrigerate overnight, up to two days to ferment. Use with your favorite fresh pasta recipe.
