Sourdough Pasta Dough

Ingredients:

  • 100g - Active Sourdough Starter
  • 250g - All Purpose Flour
  • 2 - Eggs (beaten)

Instructions:

  1. In a stand mixer with a dough hook, combine all ingredients on low speed until it just comes together. You may need to stop the mixer and knead for a few seconds by hand to get all the flour to stick. It will look like there is not enough moisture, but it will come together, trust me.
  2. Once the dough becomes one whole piece, increase mixer speed to medium and let the mixer work the dough for about 5 minutes.
  3. Form the dough into a ball, wrap in plastic wrap, and refrigerate overnight, up to two days to ferment. Use with your favorite fresh pasta recipe.
